Commonly known as Enoki, Golden needle, velvet foot or in latin Flammulina velotipes.
Our newest product, these mushrooms have been part of Asian cuisine for over 300 years and will vary in look and size depending on the way they are grown.
These mushrooms grow on dead trees or fallen logs in the wild where they are completely different in appearance to the cultivated varieties.
In the
wild the caps are enlarged like regular mushrooms and the caps are usually a
slimy orange
The cultivated varieties are grown in a dark, cold environment and are forced to stretch by placing a tight collar around the mushroom clusters encouraging them grow taller. In this way the caps remain small and the stems thin and delicate.
At Mytopia, we love the texture of the caps, for this reason we compromise slightly and allow the caps to grow slightly larger than the traditional method. This way, you get the best of two worlds, the highly desired long stems and the beautiful smooth texture of the caps.
We have also sacrificed speed of production in favour of a stronger flavour. These mushrooms have a truly divine aromatic flavour which is much stronger than that of the Oyster mushrooms. One bite and the aroma explodes through your nose.
Can be compared to sprouts in salads, they are slightly crunchy and very refreshing.
Best used raw in salads or very light cooked in stir fries, omelets, risottos or simply as a garnish for any dish.
